Stuffed Summer Squash

Stuffed Summer Squash fresh from your garden is devoured in my house!  This was made with fresh Tomato Sauce and Squash from the garden. (If you would like to know how to can Tomatoes the tutorial is in my 'Preserving Foods' section)  My older kids love this dish , except for my 10 yr old son who hates Squash and that is why I make Squash Cupcakes for him. (I will post that recipe in the future for finicky eaters) You can also make this recipe with Zucchini!


6 Summer Squash
1 lb Ground meat of your choice
1/4 cup chopped Onion
1/2 cup chopped Green Pepper
1tbsp Basil
1/2 tsp Salt
1/4 tsp Pepper
1 tbsp Garlic powder
1 Egg
1/4 cup uncooked Brown Rice
1 Qt Tomato Sauce
Parmesan Cheese


Preheat oven to 350.


Use whole Summer Squash cut the ends and scoop out the insides with a teaspoon (like you would a Pumpkin) leaving a hollow whole Squash ready to stuff.


Mix onion, green pepper basil egg and brown rice together in a bowl with the meat of your choice. If you are a vegetarian you can also use cooked Quinoa and  Brown Rice mixture to stuff the Squash.


Stuff the Squash with the meat mixture and place in a lightly greased baking dish. Pour Tomato sauce on top of the Squash.(I can my Tomatoes already pre seasoned so if you want to add spices to the sauce before pouring it on the Squash then do so)


Top it off with Grated Parmesan Cheese and bake at 350 for about 45 minutes. Test it with a fork for tenderness. When it is tender, it's done and it is delicious!!
